3 Easy Vegan Burger Patties

Arguably the most underrated dish in the world, veggie burgers are actually some of the most flavorful foods out there. The key is to build flavor profiles given that their main ingredients (most often being grains and/or legumes) can be bland. These 3 veggie burger recipes, that use Middle Eastern ingredients, are so good you won’t even miss the meat!

Bulgur Patty


Ingredients

1 cup fine bulgur wheat

1 cup water

1/3 cup flour

1/2 tsp salt

1.5 tsp paprika

1/2 tsp turmeric

1/2 tsp cumin

2 tsp virgin olive oil

Salt & pepper

Instructions

  1. Soak bulgur in water for about 20 minutes, then drain well.
  2. Mix in the rest of the ingredients.
  3. Line and shape patties on a baking sheet and coat them lightly with olive oil.
  4. Bake in an oven set to 190°C for 30 minutes until they turn golden brown.

Servings: 6-8 patties.

Lentil Burgers


Ingredients

1/2 medium onion

1 clove of galic, minced

1 medium carrot, peeled & grated

2 medium potatoes, peeled & grated

1/2 cup green lentils

1 tsp paprika

1/2 tsp cumin

1.5 cups water

1/4 cup aqua faba (or 1 egg)

1/4 cup dried breadcrumbs

Olive Oil

Salt & Pepper

Instructions

  1. In a large pan, sauté the onion, garlic, and carrots until soft (approx 5 mins). Add potatoes, paprika and cumin and stir for 3 more minutes or until mixture starts to dry.
  2. Add lentils and water. Bring to a boil then reduce heat to low and simmer until water is absorbed (approx. 25 mins)
  3. Transfer to mixing bowl and allow to cool.
  4. Add aquafaba and breadcrumbs and mix.
  5. Shape your patties.
  6. In  a frying pan, cook your patties in some olive oil for 4-5 minutes per side or until golden brown.

Servings: ~4 patties.

Chickpea Patties


Ingredients

2 cups cooked chickpeas

1 carrot, grated

1/2 onion, minced

1/2 tsp garlic powder

1/4 cup breadcrumbs

Olive oil

Salt & pepper

Instructions

    1. Drain & mash chickpeas.
    2. Mash in carrots, onions and garlic powder.
    3. Form your patties.
    4. In a skillet, stovetop grill or frying pan, heat some olive oil and grill your patties for 3-4 minutes on each side or until golden brown.

Servings: 6 patties.
