INGREDIENTS |
- 500g Spaghettini
- 300g green beans
- 2 tomatoes
- 1 red pepper
- 1 big eggplant
- 400g spring onions
- 6 garlic cloves
- 1 chili
- 1 cup olive oil
- Salt & pepper
PREPARATION |
1. Smash the garlic. Dice the chili. Chop all the vegetables in cubes about 3cm.
2. Put olive oil in a pan and start steer frying the vegetables by order: garlic, spring onions, chili, green beans, red pepper, eggplant and tomatoes.
3. Adjust salt and pepper and simmer for 15 minutes.
4. In the meantime put full water in another pan to boil the pasta.
5. When water is boiling put 3 big spoons of salt.
6. Add the pasta and cook according cooking time as indicated on the package. When pasta is cooked, drain the pasta and mix to the vegetables.
7. Adjust salt and pepper. Serve hot as well as cold.
