- 2 eggs
- Olive oil
PREPARATION |
- Remove from the freezer, the eggs you previously whisked together and placed in a Ziplock bag, labeled with the dates and number of eggs, in order to use them.
- Drop them for a few seconds in warm water and peel them.
- While the eggs are still frozen, cut them into 3 or 4 slices.
- Place a frying pan on low/medium heat, wipe it with olive oil, and then fry the frozen eggs to your desired degree of doneness.
- The end result are these cute mini fried eggs that can be used over burgers, sandwiches or any rice or noddle bowl dish

- COVID-19 has changed the way we shop and the way we store food. When we go to supermarkets, we sometimes find limited groceries to choose from and we want to make the most of the food we buy so we can make fewer trips to the grocery store. So many people are stocking up on food to reduce grocery trips while self-isolating. Luckily, there are many items one could freeze to make food last longer from fruits, veggies, bread, meals, sauces and even eggs.
- You can go the simple way of whisking together 2 eggs and placing them in a Ziplock bag, label them with the dates and number of eggs and freeze them until they can be used later for an omelet or for any of your baking needs. You could also freeze the egg whites alone in ice trays, but I think my favorite way is to freeze the whole egg in its shell. When you are ready to cook them, remove the eggs from the freezer and drop them for a few seconds in warm water and peel them.
- The cute mini fried eggs can be used over burgers, sandwiches or any rice or noddle bowl dish. Of course, you could still have mini fried eggs using quail eggs but there is a weird excitement about slicing a frozen egg and then frying it.
