ASIAN TUNA TARTARE WITH CRISPY TEMPURA LEEKS AND WASABI CREAM
Serves 3 | Preparation 30 mins Cooking 30 mins
INGREDIENTS |
• 240g fresh red tuna
Marinade
• 1 tsp black sesame seeds
• 1 tsp roasted white sesame seeds
• 1 tbsp finely chopped chives
• 1 tsp finely chopped shallots
• 2 tbsp of mirin (rice wine vinegar)
• 2 tbsp soy sauce
• 1 tbsp sesame oil
• Leeks
• Tempura batter flour
• Salt & pepper
Garnish
• 1 wasabi tube
• 10 ml cream
• Lime fingers
PREPARATION |
1. Cut tuna into bit sized cubes
2. Combine all ingredients together in a bowl and marinade
for at least 30 minutes.
3. While marinating, wash and cut leeks, julienne style
4. Coat leeks with flour and fry in oil for 1 minute
5. Dry leeks on a paper towel
6. In a bowl, add cream and 1 tsp of wasabi and mix well.
You may add more wasabi to taste
Plating the dish
1. Place the marinated tuna in a mold
2. Top with leeks and add herbs for decoration (optional)
3. Add the wasabi cream around the tuna tartare
4. Sprinkle with lime fingers
