INGREDIENTS |
- 175g smoked salmon
- 1 tsp poppy seeds
- Juice of 1 lemon
- 1 tsp olive oil
- 2 avocados, peeled and stoned
- 1 tsp olive oil
- Salt and freshly ground black pepper
For the strawberry salsa
- 100g strawberries, finely chopped
- ½ red onion, finely chopped
- 2 tbsp chopped fresh cilantro
- ½ tsp lemon zest
- 2 tbsp lemon juice
- 2 tsp jalapeño pepper,
seeded and finely chopped - ¼ tsp sugar
- Salt and finely ground black pepper
- 8 slices soda bread, one day old and toasted
PREPARATION |
1. In a medium bowl, whisk together the poppy seeds and lemon juice and olive oil. Season with freshly ground black pepper.
2. Place the separated smoked salmon slices in the bowl of the marinade. Set aside for 5 – 10 minutes.
3. In the meantime, in a small bowl place the avocados, olive oil and mash until desired consistency. Season with salt and freshly ground black pepper, to taste. Set aside.
4. In the meantime, in a small bowl combine the strawberries, red onion, cilantro, lemon zest, lemon juice, pepper and sugar. Season with salt and freshly ground black pepper, to taste.
5. On a serving plate, place the toasted soda bread slices and spread a tablespoon of mashed avocado.
6. Top with a slice of marinated smoked salmon and a tablespoon of strawberry salsa. Serve immediately.
