Holly Parnell, a passionate and ambitious chef, leads the culinary team at Bounty Beets, located within the picturesque Le Meridien Mina Seyahi Beach Resort & Waterpark. In this exclusive interview, she graciously shares the inspiring journey that has brought her to her current prestigious position.
Tell us about your professional career.
I’ve always been a passionate food enthusiast with a love for the arts. After graduating in 2017, I founded my own theatre company and worked in various bars and restaurants across London, eventually landing a management role at Parlez Local, a community-focused restaurant.
In 2022, I showcased my culinary skills on MasterChef UK, creating innovative dishes like ‘Spuddy Nuts,’ earning accolades from renowned critic Grace Dent. Following this, I moved to Dubai, where I currently manage Bounty Beets, known for its gluten-free cuisine and sustainability initiatives. I was honored with the title of Hotel Restaurant Manager of the Year at the Caterers Middle East Awards 2023. Our team is committed to leading in sustainable dining and creating memorable, eco-conscious experiences.
What is your dream in life?
My life’s dream is to accomplish one significant achievement each year. The last few years have been hard to top, but I relish a challenge! I aspire to host my own food show, exploring diverse dishes and delving into the world’s culinary cultures. Better yet, becoming the host of MasterChef UAE! Regardless of the twists and turns ahead, my ultimate dream is to find fulfillment and strength with each passing day. I hope to inspire others, emphasizing that success is not solely about what you possess but what you do with it.
What are your current projects and plans?
Our calendar at Bounty Beets is bustling with exciting events, including ongoing Bounty Beets Meets gatherings with Principle Lisa and Happy Families, where approximately 200 moms come together for wholesome family fun. We’ve recently introduced tickets for our highly anticipated Christmas wreath workshops, with the goal of making them even bigger and more festive than last year’s sold-out event. Additionally, we’re on the verge of launching the new Wonky Market with HeroGo, aimed at addressing food waste issues while supporting low-income families in the UAE. And this is just the start; there’s one more significant, top-secret project on the horizon. Stay tuned, and if all goes according to plan, it promises to be something special!
