Meet the accomplished Tiger Chen, Chef de Cuisine of The Citronelle Club, as he shares the journey that led him to his current position.
If you were to professionally introduce yourself in one sentence, what would you say?
As a seasoned Chef de Cuisine, I’m bringing forth extensive expertise in the art of Asian cooking. I am dedicated to realising my culinary vision through a steadfast commitment to focus and consistency.
Tell us a bit about your professional career
My culinary journey began at 16 years old, when I developed a passion for cooking. It was my grandmother who taught me how to combine ingredients, since then I’ve always worked in gastronomy. I worked for my first hospitality group for 6 years where I developed a solid foundation of western and eastern cooking skills, and won global competitions. I also assumed the role of Asian Young Chef Ambassador, and was a member of the Development team with WACS (World Association of Chefs’ Societies) from 2016-2020.
A turning point in my career came when I joined Michelin-starred L’atelier de Joel Robuchon in 2017, an amazing opportunity to improve my french cooking techniques under Chef Oliveir Jean (Executive Chef of Robuchon at Woodward Hotel Geneva).
What is your philosophy/ motto (10 words)?
I don’t believe in excuses, I believe in finding solutions.
What is your dream in life?
My dream is to inspire and impart my culinary knowledge to the next generation of aspiring chefs, fostering their growth and passion for the culinary arts.
What are your current projects and plans?
I’m currently spearheading The Citronelle Club as the Chef de Cuisine, which recently opened within SO/ Uptown Dubai. The restaurant merges my knowledge and technique of both Asian and French cuisine. I’m very excited to continue expanding culinary boundaries by infusing traditional Asian elements with a creative French flair, shaping an innovative and distinctive menu, creating The Citronelle Club’s own unique identity.

My foremost advice is that precision and perfection stem from practice. In order to achieve excellence in any endeavor, you must practice consistently and dedicate yourself to improving your skills.
