INGREDIENTS |
GUACAMOLE
- 700g broccoli
- 4 tbsp. olive oil
- 1 clove of garlic
- 2 seeded tomatoes
- 1 small green pepper
- 1/2 long red pepper
- 1/4 red onion
- 10 coriander sprigs, stripped
- 2 green lemons
- Black Pepper
- Salt
SALSA
- 1/4 minced red onion
- A few slices of red pepper
- The leaves of 1 sprig of coriander
- 1 drizzle of olive oil
PREPARATION |
GUACAMOLE
- Cut the broccoli into florets and peel the stalks, keeping only the tender heart. Then chop them and cook everything for 2 minutes in salted boiling water.
- Drain and immediately plunge the broccoli into ice water, to preserve the bright green color.
- Add together the olive oil, the peeled clove of garlic and 1 pinch of salt, and mix them together.
- Finely dice the tomatoes and the seeded green pepper.
- Chop the red onion and cilantro.
- De-seed the red chili and chop it finely.
- Combine all the ingredients together and add the lemon juice, 2 turns of the pepper mill and 1 pinch of salt.
SALSA
- Mix all the salsa ingredients.
SERVING
- Spoon the salsa over the guacamole just before serving, and enjoy with tortilla chips.
