Tell us about your journey in becoming a renowned pastry chef:
Growing up with my grandmother’s pots and pans ignited my passion for pastry. I pursued a diploma in hospitality and restaurant management, refining my skills at Le Cordon Bleu in Paris. Returning to Lebanon in 2015, I founded my catering company, continued training at Bellouet conseil, and showcased my talents at the Chocolate Fair for two years, laying the foundation for my pastry career.
How did you come to join Mezzencore?
Facing economic challenges in Beirut, I made Paris my new home, joining Mezzencore in 2022 through my friend, executive chef Muhannad Tleiss. Our collaboration at Mezzencore is enriching, allowing me to contribute my culinary expertise and immerse myself in a fresh and exhilarating environment as we innovate Lebanese cuisine.
Who inspired you in your career?
My grandmother, Janine, instilled culinary wisdom and the art of infusing emotions into meals. Philippe Conticini guided my understanding of pastry, and resilient colleagues in Lebanon inspired me profoundly.

In my 24-year journey, the Bella Halwa tart, a pistachio and halva delight, became Mezzencore’s signature dessert. Recognized by L’Officiel magazine, it stands among trending desserts, a testament to dedication and craftsmanship.
What are your aspirations for Mezzencore?
Joining Mezzencore, I aimed to infuse modernity into traditional desserts. Our innovations, like the Meghle twist and Middle Eastern-inspired European pastries, carve a unique identity. We strive to be a culinary destination, blending tradition with innovation and creating a community of dessert enthusiasts.
Could you provide insights into your next steps or upcoming projects?
Looking ahead, we’re excited to embark on a wellness journey, developing healthy pastries with superfoods and natural sweeteners. Exploring the possibility of opening a pastry shop featuring international desserts with our unique twist is on the horizon, envisioning a delightful fusion appealing to diverse palates.
