Our favorite summer salad! We love peaches, but grilling them adds an extra level of flavor and texture, and it goes so well with arugula and blue cheese. This is a simple salad, with its ingredients being arugula, blue cheese, glazed pecans, diced red onion, and peach slices brushed with olive oil and grilled on all sides (takes us about 8 minutes to grill the peaches).
Serve with balsamic vinaigrette.
It is also a great salad for the fall, just substitute apples for the peaches!
