INGREDIENTS |
- 2 cups cooked lentils
- 1 cup green pepper
- 1/2 cup yellow pepper
- 1/2 cup red pepper
- 3 tomatoes
- 1 bunch parsley
- 3 spring onions
Dressing
- 1/4 cup lemon juice or more to taste
- salt to taste
- 2 tablespoon extra virgin olive oil
- 1 tablespoon dried mint
PREPARATION |
- Chop the vegetables finely.
- In a separate bowl, mix the ingredients of the dressing.
- Mix the vegetables, lentils and dressing.
- Serve the lentil salad chilled.
