- 1 tbsp vegetable oil
- 1 finely chopped medium onion
- 3 crushed garlic cloves,
- 2 medium zucchinis cut into rounds
- 2 servings cooked ground beef
- 1 tsp salt
- ½ tsp ground cinnamon
- ½ tsp hot pepper
- 1 tsp cumin
- 2 tsp dried mint
- 400g finely diced canned tomatoes
- 1 tbsp tomato paste
- ½ cup water
- 500g penne pasta

PREPARATION |
1. Heat oil, add onions and stir-fry until lightly browned. Add garlic and zucchini, stir for 5 minutes. Add meat and seasoning while continuously stirring until tender. Add tomatoes and mix well for 1 minute.
2. Dissolve tomato paste in water, add to the mixture and stir again. Bring to a boil, cover the pot and simmer over low heat for 10 minutes or until the sauce thickens.
3. Cook the Penne and add it to the mixture.
4. Divide into 5 equal-sized portions. Serve hot.
TIP If the meat was not previously prepared, start by cooking 300g raw ground beef. Instead of 400g of canned tomatoes, you can finely chop 4 fresh medium tomatoes. It is preferable to use brown penne because it is rich in fiber and vitamins.
