- 1 kg young red chili peppers
- Enough extra virgin olive oil to fill the jars
PREPARATION |
- Wash the chili peppers. Dry thoroughly.
- Pack the peppers tightly in sterilized jars. Add the olive oil. Leave to settle for 10 minutes. Add more peppers. This will prevent them from floating in the oil.
- Cover loosely for at least 12 hours, later tighten lid.
- Wipe the jars with a damp kitchen towel.
- Keep the jars in a cool, dark place.
- Once jars are opened, replenish with olive oil so that the contents are always immersed to avoid spoilage.
