INGREDIENTS |
- 100g fresh scallops
- ½ tbsp extra virgin olive oil
- ½ tbsp lemon juice
- 1g raisins
- 1g capers
- 1g cranberries
- 1g almonds
- 1g chives
- 1g skin preserved lemon
- Fresh black pepper
- Sea salt
PREPARATION |
1. Garnish with mustard cress.
2. With a sharp knife, slice each scallop crosswise into very thin slices. Place slices onto a plate, laying them flat in a circular pattern.
3. Add lemon juice, black pepper and salt. Then begin to add the rest of ingredients one by one.
4. Add Extra Virgin olive oil. Serve immediately.
