INGREDIENTS |
• 6 sprigs kale
• 1 avocado
• ¼ small red onion
• 10 cherry tomatoes, cut in half
• 1 handful pumpkin seeds
• 1 handful sunflower seeds
Dressing
• 5 tbsp apple cider vinegar
• 10 tbsp olive oil
PREPARATION |
1. Take the kale leaves off the stems – discard the stems. Cut the kale leaves into smaller bite-sizes with your hands. Smash half an avocado with a fork and a drizzle of olive oil. Massage the kale leaves one by one with the mashed avocado. Mix in the rest of the ingredients.
2. For the dressing, whisk the vinegar and the olive oil. Slice up the remaining avocado half. Add the dressing and serve immediately.
